Pork Or Lamb Vindaloo ( Vindalho ) Recipe


  • 2 pound Pork / Chicken / Goat with a little bit fat. ( or your choice meat),
  • 4 tbsp Goan Vindaloo Masala, 2 tbsp of Salt ,2 tbsp Seasoned Vinegar,
  • 1 tbsp of fresh Garlic Paste ,1 tbsp of fresh Ginger Paste (fresh if possible),
  • 1 tbsp of Sugar, 2 medium Onions cut finely ,1 cup Water,
  • Add Salt to taste


  • Cut the Pork Meat into 2" cubes.
  • Apply salt, seasoned vinegar,ginger,garlic, Vindaloo paste and sugar, marinate over night.
  • Add 3 tbsp of oil and slightly brown the onions.
  • Add the marinated meat and saute for 3 to 5 minutes.
  • Add a cup of water and salt to taste.
  • Then cover and simmer gently, stirring occasionally, until pork is cooked through, about 40 minutes.

It is served with steamed rice cakes called Sanam. But you can serve it with Plain Rice, Pulao or French bread.
