Chicken Or Beef Xacuti

Ingredients:

  • 3 lbs of chicken or beef
  • 1 1/2 cup frozen grated coconut
  • 1 inch fresh ginger
  • 6 cloves of garlic
  • 2 medium onions
  • 3 tbsp lemon juice
  • 1 1/2 cups water
  • 1/4 tsp turmeric powder
  • 4 tbsp of Xacuti masala powder
  • Few sprigs of cilantro
  • 3 tbsp Oil
  • Salt to taste
Directions:

  • Cut the chicken or beef into 2 inches cubes.
  • Apply salt, lemon juice, ginger and garlic paste keep aside 45 to 60 minutes.
  • Heat a non-stick pan, add the halved onions till it gets slight burnt on all sides and smells caramelized.
  • Keep aside the onions and toss in the coconut and saute till light brown
  • Add the Xacuti masala and toast for another 2 to 4 minutes till it smells toasty.
  • Grind the toasted coconut and onions to a paste by adding 1/4 cup water.
  • Heat oil add turmeric stir and add the ground mix saute for 2 minutes.
  • Add the marinated meat and water, salt to taste and cook covered on medium heat.
  • Stirring occasionally for 45 minutes or till tender.
  • Add chopped cilantro. Enjoy with steamed rice.
  • Perfect meal for a gluten free diet.
